Generally, on the PalmOS: Use the menu key like you would the ctrl button on a PC. Menu + C will copy, Menu + X will cut, and Menu + P will paste. Tip: combine this with the utility Treo Select Text and you have a relatively painless way to select and then copy, cut, or paste text.

On Windows Mobile the process is similar, but you may need to drill down in the Submenu system to access these features.
